Biscuits and Jam!

I didn't get biscuits made the day after I made jam, but a day later we enjoyed delicious blackberry jam and homemade biscuits. The jam turned out great! It is so yummy. I use less sugar than most recipes call for and so the jam has a really true blackberry taste instead of just a sugary sweet taste.

If you love making biscuits here is a really easy recipe that turns out every time. If you haven't ever made homemade biscuits I encourage you to try this. Surprising family or friends will be really fun and they will LOVE hot, buttery, homemade biscuits.

A couple things to know about biscuits:
Don't "over mix". You want to fold the dough just until it is mixed. If you "knead" it over and over it will get tough and you won't like the end result.

When you roll them out to cut them, again don't over-work the dough. Just roll out nice and easy or even just use your fingertips and gently pat the dough.

I am including two of my favorite recipes. Here is the first one. I use White Lily flour.

Easy-to-Make Cream Biscuits

Easy-to-Make Cream Biscuits
Prep Time: 10 min
Cooking Time: 10 min
Makes: 12 biscuits

Ingredients:

Crisco® Original No-Stick Cooking Spray
1 3/4 cups White Lily® Self-Rising Flour
1 cup heavy cream
1/4 cup butter

Instructions:

1.Heat oven to 475°F. Spray baking sheet with no-stick cooking spray.
2.PLACE flour in large bowl. Gradually stir in cream, adding only enough to moisten flour and hold dough together.
3.TURN dough onto a lightly floured surface. Knead gently two or three strokes. Using light touch, pat or roll dough to 1/2-inch thickness.
4.CUT with floured 2-inch biscuit cutter, leaving as little dough between cuts as possible. Gather remaining dough and re-roll one time; cut as described above. Discard scraps.
5.PLACE on prepared baking sheet 1 inch apart for crisp sides or almost touching for soft sides. Brush tops with melted butter.
6.BAKE 8 to 10 minutes, or until tops are golden brown. Serve hot.


Here is the other recipe I use often, I would have shown more on the plate but they disappeared so quickly there was only one left when I remember I wanted to take a picture! :)



White Lily Light Biscuits

Ingredients:

Crisco® Original No-Stick Cooking Spray
2 cups White Lily® Self-Rising Flour

OR 2 cups White Lily® Unbleached Self-Rising Flour
1/4 cup Crisco® All-Vegetable Shortening
OR 1/4 stick Crisco® All-Vegetable Shortening Sticks

2/3 to 3/4 cups buttermilk or milk

Instructions:

1.HEAT oven to 500°F. Coat baking sheet with no-stick cooking spray.
2.MEASURE flour into large bowl. Cut in shortening with pastry blender or 2 knives until crumbs are the size of peas. Blend in just enough milk with fork until dough leaves sides of bowl.
3.KNEAD gently 2 to 3 times on lightly floured surface. Roll dough to 1/2-inch thickness. Cut using floured 2 1/2-inch biscuit cutter.
4.PLACE on prepared baking sheet 1 inch apart for crisp sides or almost touching for soft sides.
5.BAKE 8 to 10 minutes or until golden brown.

Prep Time: 10 min
Cooking Time: 12 min

Jamming Tonight! Homemade Blackberry Jam


Five years ago we drove south to Alabama and were given wonderful blackberry plant shoots from our friends Linda and Jim. Now those plants are providing a large amount of very large, tasty blackberries. Last summer I froze several bags of berries and now on this cold January day it was the perfect time to make jam! It only took about an hour, a little sugar, a box of Sure Jell (apple pectin) and 7 pint jars with lids.

Here is a run down:
5 cups crushed blackberries
2-½ cups sugar
One box Sure-Jell Fruit Pectin
½ tsp. butter or margarine

1. Fill canner, or extra-large pot, with water, bring to boil and let simmer.

2. Wash jars and screw bands in hot, soapy water, rinse with warm water. Pour boiling water over flat lids in saucepan, let stand in hot water until ready to use. Drain well before using.

3. Prepare fruit: For blackberries – crush 1 cup at a time, using a potato masher or food processor. Do not puree, use the pulse button, as jam should have bits of fruit. You will need exactly 5 cups of crushed fruit and place into a 6 to 8 quart saucepan.

4. Mix ¼ cup sugar with 1 box of Sure-Jell.

5. Stir pectin-sugar mixture into the fruit. Add ½ tsp. butter or margarine to reduce foaming.

6. Bring mixture to a full rolling boil. This is a boil that doesn’t stop bubbling when stirred.

7. When at a full rolling boil, stir in remaining 2 1/4 cups sugar - quickly. Return to full rolling boil and boil exactly one minute, stirring constantly. Beware – this is the moment when some of this delicious boiling syrupy jam popped up out of the pan and onto my hand. Ouch.

8. Remove from heat, skim off any foam. I didn’t have any foam because I added the ½ tsp. butter, but you may have a little bit.

9. Ladle quickly into prepared jars, filling to within 1/8 inch of the top. Wipe jar rims and threads. Cover with two-piece lids. Screw bands on tightly. Place jars on elevated rack in a canner (or large pot). Water must cover jars by 1 to 2 inches. Add boiling water if needed. Cover; bring water to gentle boil.

10. Process jam for 10 minutes.

11. Remove jars and place upright on a towel or cooling rack.

At this point you have three significant events yet to happen:

• As the jars cool each lid that seals will make a “pop” sound. It is lots of fun to listen for the popping of each one of the jars.

• Let stand at room temperature 24 hours
The next significant moment is when you open up a jar and see that it is in fact “jelled” and the consistency of a good jam.

• And lastly, when you spread that delicious homemade jam on your favorite biscuits, bread, pancakes, or peanut butter!

Store unopened jams in a cool, dry, dark place for up to 1 year.
Refrigerate opened jars. If a jar doesn't seal, the jam is still good, just store in the refrigerate.

Incredibly Sinful Praline Pecan Cheesecake

Crust

1 package Pillsbury Plus butter recipe cake mix
1/2 cup softened butter or margarine

Filling:
3 (8 oz.) pkg. cream cheese, softened
1/3 cup sugar
1 1/2 teaspoon rum extract
4 (1.2 oz.) toffee candy bars, coarsely crushed
3 tablespoons flour
3 eggs

Topping
1/2 cup packed brown sugar
1/3 cup caramel ice cream topping
1 cup chopped pecans

Directions:

Heat oven to 325 degrees. Combine cake mix and butter in large bowl, mixing at low speed until crumbly. Set aside 1 cup of mixture for topping. Press remaining mixture in bottom greased 9 or 10 inch springform pan.

In the same bowl, combine cream cheese, sugar, flour, and rum extract; beat until smooth. Add eggs and mix well. Stir in crushed candy bars and pour into crust lined pan. In small bowl combine reserved crumb mixture, brown sugar, and pecans; blend well. Sprinkle evenly over filling.

Bake at 325 degrees for 70-85 minutes or until center is set and topping is golden brown. Remove from oven and drizzle caramel topping over top.

Bake for 8-10 minutes more to set topping.

Cool 30 minutes. Run knife around sides of pan to loosen. Cool completely. Remove sides of pan and refrigerate 4-5 hours or overnight. Store in refrigerator.

☺A little piece goes a long way, this is rich but delicious!

The BEST Meat Loaf - It's What For Dinner!

☺ A favorite meatloaf recipe given to us by friends years ago, we always serve with garlic mashed potatoes, green beans, and honey wheat bread! Delicious!


Dittmer Meat Loaf

Combine:

2 lbs. hamburger
1 cup soft bread crumbs (take some bread and crumble in your hands)
1 medium onion, chopped
1 egg
½ tsp salt
1/4 tsp red cayenne pepper (very important ingredient)
Mix the above and shape into two round loaves. Place in 9 x 13 baking dish.

Combine:

16 ounce tomato sauce
½ cup water
3 TB vinegar
1/4 cup brown sugar
2 TB mustard
3 tsp. Worcestershire

Mix these ingredients and pour over the round loaves.
Bake 1 1/4 hours at 350 degrees.

Walnut Grove Sage Sausage Balls

When we had our bed and breakfast I served this sausage recipe every week. Returning guests always asked me if I would make it for them! I still make it today and add it regularly to breakfast, brunch, or "breakfast for dinner" meals! Especially when we have family or friends visiting! It is very quick and easy to make and can be frozen and baked when ready to serve. Let me know if you try it and how you like it!

Sage Sausage Balls


2 pounds bulk sage sausage; (we use Williams Sausage and I think it’s the best)
½ cup milk
1 cup chopped apple
1 cup Pepperidge Farms Stuffing Mix
½ cup chopped onions or ¼ cup dried onions
2 eggs

Mix all ingredients together. Grease 12 muffin cups, or 36 mini-muffin cups.
Fill cups. Bake at 350 degrees, 45 minutes for large muffin tin, and 20 minutes for mini-muffin pans.

☺ Can be doubled or tripled and frozen. Can use ring mold or loaf pan instead of muffin tins.

We like to use Williams’s Extra Sage Sausage but this recipe is equally as good with 1 lb. country sausage and 1 lb. hot sausage.

This is a great compliment to any breakfast entrée. Be sure to make plenty because they disappear fast.

The Day My Guardian Angel Saved My Life

Today I am reprinting a story written by my friend Betty. She is a career mail carrier and we met during the Good Friday Tornado that hit our town in April 2009. She joined the Red Cross efforts and gave up her weekend to serve others. This story is a little long, but well worth the read. I hope that it blesses all who read it. Thank you Betty for sharing!

"It was a normal cold day the 16th of January 1998. 12 years ago - a day that has been etched in my head forever. I woke up feeling strange. Feeling like I never felt before. Something was wrong but I didn't know what. I mean I had just woke up, what could possibly be wrong? I wasn't feeling sick. I kept thinking, maybe it had to do with my brother Jimmy, who at the time was having trouble just being a cop in Knoxville, and the death of a drug addict who ran from him and his partners. So I tried to shrug it off. I went into work trying not to think of anything but what I was supposed to be doing. As the day progressed, my feelings got worse. Something was terribly wrong. I couldn't figure to save my life what was going on.

I went out on my route, which at the time was mostly businesses and mostly walking an old neighborhood in downtown Nashville. Most of the people that lived there were older people who would come out and fuss at me for not having a cover on my head to keep the warmth in. As I walked into one of these businesses, it was a man and a woman who actually worked side by side with totally different businesses. She was an interior designer. He redid classic cars. They always hung out together though and that day I walked in and the woman looked at me and said, "what's wrong with you? You don't look right." I told her I had no clue what I was feeling, just had the bad feeling all day. The man, came up behind me, put his hands on my shoulders and squeezed them. He leaned over my shoulder and told me "I'm sending your Guardian Angel to be with you the rest of the day." I thanked them for that and went on my way.

I feel I must tell some of you how walking house to house is usually done by mail carriers, going from the mailbox on the porch and cutting straight across through the yard to the next porch. It cuts some time for us. That day, something made me go from the porch, walk down their sidewalks, walk the sidewalk that ran right next to 2nd Ave, which is a very busy one way street, and walk up the next sidewalk to the next door. If I had not completely changed my routine that very day, I may not be here telling you about it.

Still feeling strong about something going terribly wrong that day, I was walking with my head down, thinking about how I really should have a hat on since it was only about 27 degrees at the time. Thinking to myself that one day, I'm gonna listen to these old women and freak them out by having one on! I also must tell you, which is quite important part of this story, I dress in layers. It's much warmer than wearing just one big heavy coat. And I can maneuver better.

Well on this faithful day of a very bad feeling, changing my routine, wishing I had a hat on, and being told my guardian angel was going to be with me.......... it hit. I was on the sidewalk next to the busy 2nd Ave and turned my head to go up the next sidewalk. All I remember was a black mass in the air with teeth right at my face! The little I remember after that was going down and giving this dog, which turned out to be 3 Rottweilers, my backside. I remember being dragged and little by little, my shirts were coming off. First, my Postal sweater, then, my sweatshirts, then my longjohn shirt. I was being dragged to the backyard, but they couldn't get a good hold of me because of my clothes.
The next thing I remember, was looking up and seeing this man with a 6 foot metal pole hovering over me. My thought at that point, "Oh God, don't hit me...." My customers had come out of their houses next door and were chasing the dogs away. One of them being scared to death of dogs, as I found out later, had the courage to grab one of the dogs and throw him off me while this other man with the six foot pole, who was an electrician just passing by and saw the commotion of my customers, grabbed a pole from the back of his truck started beating at the other dogs.
I remember one of the men yelling at me to stay down that I was bleeding and help was on the way. I refused not knowing if they would come back for me. I had nothing but a t-shirt on at this point and didn't feel the cold at all. An ambulance came and put me in the back. The police came in droves. They were everywhere, and I could hear shooting, with guns and shotguns. The cops apparently were freaking out so bad, they missed the dogs, and shot a car, someone's shudders, a gutter and who knows what else. But they missed the dogs. The elementary school a block up the road was put on lockdown, the entire neighborhood was in total chaos! All because of my bad feeling that from now on, I will call in sick if I EVER get it again.

I went to the hospital and to the amazement of the Doctors and nurses who found out 3 Rottweilers were mauling me, I had minor wounds. One hole in my leg, one in my arm, plenty of scratch bite marks on my back and one in my rearend. I did have to get my rearend operated on about a month later, because I found I was not able to sit down without being in pain. One of them had left me a gift, a piece of their tooth. Don't get me wrong, My entire side of my body was a solid black and blue and I stayed that way for a couple weeks, not being able to move hardly from being so sore and hurting.
BUT I WAS ALIVE!

I found out later that the man who lived there, God rest his soul, he died about 5 years ago, had 13 dogs in his back yard! I was lucky only 3 of them got out that day. The police said, the dogs were dragging me to the back yard to take me to the other dogs.
The Post Office gave the 4 people who contributed to saving my life each a beautiful brass eagle about 12 to 15 inches tall with the inscription of their names and what they did for me and $100 each.

As for the dogs, the last one was found the next day and the owner had 10 of his dogs put down. I didn't like hearing about that, I do not blame the dogs for what they did. They are, after all, dogs.

I lived at the time with my sister and we had the next door neighbor who owned a Rotty and knew I couldn't go outside if she was out with her dog. Until one day, my sister asked me to go next door to borrow a couple eggs. The woman answered the door and I backed up because the dog came with her. She said, 'it's okay Betty, let me get you those eggs.' She walked away with the door wide open and that Rottweiler slowly walked out as I froze in one place. I couldn't move, I couldn't run, I couldn't even speak. My eyes closed and I felt her dog sniffing me and then........... he licked me and looked up as if to say, 'see, we aren't all bad! You're my neighbor and I want you to go back to talking to me when I'm outside like you used to." She came back with those eggs, and asked me to put my hand on her dog and pet him. I did. And it was the first step to my recovery.
Since then, I have become more of a dog lover than I ever had been. I at that time had 2 chows, they finallly left me 2 and 3 years ago. They lived one heck of a full life with me and my son. They had to endure when I brought home a yapping Yorky 5 years ago,(I think), and when I said, "look Jason what followed me home!" A solid black German Shepard! She is a true and true dog that never leaves my side. She even walks behind the lawnmower when I cut grass.

That fateful day, January 16th, 1998 will be a day that I will forever be thankful for my life being spared. God, my Guardian Angel, my 3 customers and that one man with the very long steel pole saved my son from becoming motherless. Life from that moment on became something I cherish! I believe my customer really did call upon my Guardian Angel to make sure he was with me the rest of the day. I believe that Angel covered me when I was being attacked! I believe that is why I came out of it with so little scars. I believe that God made sure I didn't suffer mentally for long because my son needed his Mother to be the strong woman he knows me as. I returned to work a month later.
I have never worked that day again, and I never will. That is my day....

Well, until now. My son is getting married on that same day! So from now on......... this day will be a day of rejoicing, not only me being alive, but a new chapter in my wonderful son's life will be opening up!"

Buttermilk Pecan Pie

My sister-in-law, Liz, received this recipe from her son Andrew. The recipe is from Andrew's mother-in-law, Suzy. Andrew was the lucky recipient and really enjoyed this new take on Pecan Pie. I love to make Pecan Pie and this variation definitely has me interested!

Buttermilk Pecan Pie

1/2 C butter
2 C sugar
2 tsp vanilla
3 eggs
3 T flour
1/4 tsp salt
1 C whole milk buttermilk
1 C chopped pecans
1 9" unbaked pie shell

Preheat oven to 300 degrees. Cream butter and sugar, adding 1/2 C sugar at a time. Blend well. Blend in vanilla. Stir in eggs, one at a time. Combine flour and salt; add small amount at a time. Stir in buttermilk. Sprinkle pecans in bottom of pie crust, pour custard mix over the pecans and bake 1 1/4 to 1 1/2 hrs.

Note from Suzy: This is not part of the recipe but I baked the pie shell for about 5 to 7 minutes first. I let it cool then proceeded. Also, I toasted the pecans before putting them in the pie. Next time I will add another 1/4 cup of pecans.

Tomato Soup.... again! Catherine's Kickin' Tomato Soup


Okay, so yesterday I went to the pantry to gather items to make the homemade tomato soup. My eyes fell upon a can of Rotel tomatoes (tomatoes and green chilies) - I immediately thought ... why not? So, all in all I made a designer tomato soup that I am sure is better than yesterday's recipe. This has got a kick that just keeps on giving! My family loved it. Give it a try...

Catherine's Kickin' Tomato Soup

4 tbsp. butter
4 tbsp. flour
2 stalks green onions chopped up finely
1 can 15 oz. tomato sauce
1 can 15 oz. diced tomatoes
1 can 10 oz. Rotel tomatoes (with green chilies)
14 oz. can of chicken broth

Melt butter and saute green onions until soft. Add flour and stir until the flour is well absorbed. Slowly add the chicken broth stirring with a wire whip until all the butter/flour mixture is well mixed and slightly thick.

While the onions are cooking, in another pan heat the tomato sauce, diced tomatoes, and can of Rotel.

When the tomatoes are heated, slowly add the butter/flour mixture.

Take off the stove and cool. When it has cooled a bit pour half of this lumpy mixture into a blender and puree. Pour back into stock pot and puree the balance of the mixture.

Bring soup to heat and simmer until ready to eat.

Top with crushed Tostitos chips. This soup is just delicious and really has a nice kick!

Serve with carrot and celery sticks, fresh bread... and we finished the meal with Creme Brulee!

Homemade Tomato Soup

It's whats for lunch! Baby it's cold outside and it will be warm inside with this delicious homemade tomato soup and some fresh multi-grain bread.

HOMEMADE TOMATO SOUP

□ 4 tbsp. butter
□ 4 tbsp. flour
□ Green onion, cut up
□ 1 qt. fresh tomatoes, cut in pieces
□ 1/4 tsp. soda
□ 1 1/2 tsp. salt
□ 1/4 tsp. pepper
□ 2 c. milk

Saute butter, flour, and green onion in pan. In another pan heat tomatoes. When tomatoes are heated, add rest of ingredients along with the sauteed mixture. Bring to a boil and eat.

** I am substituting one cup milk for 1 cup chicken broth. I am also adding some finely chopped celery and carrots, because I happen to have them on hand.

New Year's Day Yummy Tiramisu

I am praying for a blessed year for all my family and friends. A year full of sweet surprises, attainable challenges and lots of good food, love and laughter!


We started 2010 out with a New Year’s Day party! Since we didn’t want to get out in the cold on New Year’s Eve we invited friends and family over for a “high noon” dinner and games! We had lots of fun, feasted on Lasagna, fresh garden salad, roasted garlic Italian bread, Tiramisu and Crème Brulee!


Tiramisu takes a little time to make, but I think it is worth the effort. Give it a try!


Tiramisu


Ingredients

  • 7 yolks
  • 1 cup sugar for yolks
  • 3 cups mascarpone (sweet cheese)
  • 3 egg whites
  • 1/4 cup sugar for whites
  • 1 cup heavy cream, whipped
  • 2 1/2 cups cooled espresso
  • 1/2 cup kahlua
  • 20 to 24 ladyfingers
  • 1 cup chocolate shavings


Directions


In a mixer with the whip attachment, whip yolks and sugar until thick and pale in color (ribbon stage). Add mascarpone and whip until well incorporated. In a separate bowl, whip egg whites to a soft peak, gradually add sugar, and then slowly pour in dissolved gelatin. Whip to a stiff, glossy peak. Fold whites into mascarpone and yolk mixture then fold in whipped cream.


In a separate bowl, combine espresso and kahlua. Soak 1 ladyfinger at a time in the espresso mixture. This must be a “quick dip” or the ladyfinger will get too soggy. In an 8 by 10-inch pan, arrange soaked ladyfingers close together in neat rows until the bottom of the pan is completely covered. Pour 1/2 of the mousse over the ladyfingers and smooth with a rubber spatula. Sprinkle 1/2 of the chocolate shavings over mousse. Create another layer and chill until set.

NOTES: My friends loved this Tiramisu which we served at our New Year’s Day Party. Instead of layering in a pan I layered in beautiful Rosepoint crystal goblets! It looked as good as it tasted!
