Tomato Soup.... again! Catherine's Kickin' Tomato Soup


Okay, so yesterday I went to the pantry to gather items to make the homemade tomato soup. My eyes fell upon a can of Rotel tomatoes (tomatoes and green chilies) - I immediately thought ... why not? So, all in all I made a designer tomato soup that I am sure is better than yesterday's recipe. This has got a kick that just keeps on giving! My family loved it. Give it a try...

Catherine's Kickin' Tomato Soup

4 tbsp. butter
4 tbsp. flour
2 stalks green onions chopped up finely
1 can 15 oz. tomato sauce
1 can 15 oz. diced tomatoes
1 can 10 oz. Rotel tomatoes (with green chilies)
14 oz. can of chicken broth

Melt butter and saute green onions until soft. Add flour and stir until the flour is well absorbed. Slowly add the chicken broth stirring with a wire whip until all the butter/flour mixture is well mixed and slightly thick.

While the onions are cooking, in another pan heat the tomato sauce, diced tomatoes, and can of Rotel.

When the tomatoes are heated, slowly add the butter/flour mixture.

Take off the stove and cool. When it has cooled a bit pour half of this lumpy mixture into a blender and puree. Pour back into stock pot and puree the balance of the mixture.

Bring soup to heat and simmer until ready to eat.

Top with crushed Tostitos chips. This soup is just delicious and really has a nice kick!

Serve with carrot and celery sticks, fresh bread... and we finished the meal with Creme Brulee!
