Buttermilk Pecan Pie
1/2 C butter
2 C sugar
2 tsp vanilla
3 eggs
3 T flour
1/4 tsp salt
1 C whole milk buttermilk
1 C chopped pecans
1 9" unbaked pie shell
Preheat oven to 300 degrees. Cream butter and sugar, adding 1/2 C sugar at a time. Blend well. Blend in vanilla. Stir in eggs, one at a time. Combine flour and salt; add small amount at a time. Stir in buttermilk. Sprinkle pecans in bottom of pie crust, pour custard mix over the pecans and bake 1 1/4 to 1 1/2 hrs.
Note from Suzy: This is not part of the recipe but I baked the pie shell for about 5 to 7 minutes first. I let it cool then proceeded. Also, I toasted the pecans before putting them in the pie. Next time I will add another 1/4 cup of pecans.
Today's Scripture: Proverbs 29:22
Anger
“Sometimes anger is an appropriate response to injustice and sin, but when anger is unchecked or misdirected, it can cause great destruction. Jesus goes so far as to say that unresolved anger and resentment are no less serious than murder! (Mt 5:21-22) Stewing over resentments takes people’s focus off God and sets them on a course toward evil (Ps 37:8-9). Venting frustration, whether through silent, seething rage or explosive temper tantrums injects the whole situation with negative tension. There certainly are much more productive ways to expend one’s energy! Consider the advice in Hebrews 10:24 and come up with some specific ways you could invest your energy more positively in the lives of those around you.” Taken from NIV Women of Faith Study Bible
